Bạc xỉu

Bạc xỉu comes from the Chinese-Vietnamese community of Sài Gòn. The name is usually traced to a Cantonese phrase for milk with just a little coffee, and that's exactly what it is: the gentle one.

Two glasses of iced coffee with condensed milk on a garden table

What you'll need

Ingredients

  • 10 g dark-roast ground coffee, phin grind
  • 1 tablespoon (about 20 ml) sweetened condensed milk
  • 60 ml fresh milk
  • About 60 ml water just off the boil
  • Ice

Equipment

  • Phin filter
  • Glass
  • Spoon

Method

  1. 01

    Milk first

Stir the condensed milk and fresh milk together in a glass.

  2. 02

    Brew a short phin

Use 10 g of coffee. Add the coffee to the phin, give it a gentle shake to level it, and place the press on top. Bloom with a splash of water for 30 seconds, then add about 50 ml more. You want a small, strong shot.

  3. 03

    Ice

Fill the glass of milk with ice.

  4. 04

    Coffee on top

Pour the coffee slowly over the ice so it sits on the milk, then stir as you drink.

Tips

  • For a hot bạc xỉu, warm the milk and skip the ice.
