Cà phê sữa đá
Cà phê sữa đá means coffee, milk, ice. Condensed milk keeps without a fridge, which is how it became part of Vietnam's coffee; strong robusta cuts through its sweetness.

What you'll need
Ingredients
- 20 g dark-roast ground coffee, phin grind (robusta is traditional)
- 2 tablespoons (about 30 ml) sweetened condensed milk
- About 120 ml water just off the boil
- A tall glass of ice
Equipment
- Phin filter
- Heatproof glass
- Tall glass
- Spoon
Method
- 01
Condensed milk first
Spoon the condensed milk into a heatproof glass.
- 02
Set up the phin
Use 20 g of coffee. Add the coffee to the phin, give it a gentle shake to level it, and place the press on top. Sit the phin on the glass.
- 03
Bloom
Pour about 20 ml of hot water and wait 30 seconds.
- 04
Fill and drip
Fill the phin, put the lid on and let it drip for 4 to 5 minutes onto the condensed milk.
- 05
Stir
Lift the phin away and stir until the coffee and milk are one colour.
- 06
Pour over ice
Pour into a tall glass full of ice, stir again and drink straight away.
Tips
- Too sweet? Start with one tablespoon of condensed milk and add more to taste.
- No phin? Use 60 ml of strong espresso or moka pot coffee.
