How to brew with a phin

The phin is Vietnam's everyday coffee maker: a small metal cup with holes in the bottom, a press and a lid. It's cheap, it never breaks, and it makes you wait, which is half the point.

Hot water poured from a kettle into a phin on a glass

What you'll need

Ingredients

  • 20 g ground coffee, phin grind (a little coarser than espresso, like coarse sand)
  • About 120 ml water just off the boil (about 95 °C)
  • Optional: 1–2 tablespoons sweetened condensed milk

Equipment

  • A phin filter (6 or 8 oz)
  • A heatproof glass or cup
  • A kettle
  • Scales, or a level tablespoon (about 7 g of coffee)

Method

  1. 01

    Warm everything

Rinse the phin and your glass with hot water, then tip it out. A warm glass keeps the brew hot through the slow drip.

  2. 02

    Add the coffee

Add the coffee to the phin, give it a gentle shake to level it, and place the press on top. Add condensed milk to the glass now if you take it sweet.

  3. 03

    Press lightly

A gravity press just sits on the coffee. With a screw-down press, turn until it meets resistance, then back it off half a turn.

  4. 04

    Bloom for 30 seconds

Pour about 20 ml of water, just enough to wet the grounds, and wait 30 seconds while they swell.

  5. 05

    Fill and cover

Fill the phin to the top (about 100 ml) and put the lid on to keep the heat in.

  6. 06

    Let it drip

The drip should take 4 to 5 minutes. When it stops, lift the phin off, stir, and drink it hot or pour it over ice.

Tips

  • Dripping faster than 3 minutes: grind finer or press a little firmer next time.
  • Slower than 6 minutes, or stopped: grind coarser, or loosen the press.
  • Robusta or a robusta blend gives the classic strong, chocolatey phin cup.
