Henry CFounder, Cafe Phin
The person behind it
Nobody rushed it. You waited, you stirred, you poured it over ice.
Before school, before anyone had said much, there was the sound of a phin dripping onto a spoonful of condensed milk. That wait was part of the coffee, and it's the part I missed most when I left home.
Years of café coffee later I went looking for that cup again, all the way back to the farms of the Central Highlands. Cafe Phin is what I found: coffee from farming families we know, roasted in Vietnam, sent to your door in Australia.
Robusta and arabica from farming families we know, roasted in Vietnam.
