Cà phê muối (salt coffee)

Salt coffee (cà phê muối) comes from Huế, where it was first served around 2010, and spread across Vietnam from the late 2010s. A little salt softens the bitterness and rounds out the sweetness.

What you'll need

Ingredients

  • 20 g dark-roast ground coffee, phin grind
  • 1 tablespoon sweetened condensed milk (for the coffee)
  • 60 ml thickened cream
  • 1 teaspoon sweetened condensed milk (for the cream)
  • A small pinch of sea salt (about 0.5 g)
  • Ice

Equipment

  • Phin filter
  • Glass
  • Small bowl and whisk

Method

  1. 01

    Brew over condensed milk

Brew 20 g of coffee through the phin onto 1 tablespoon of condensed milk, then stir.

  2. 02

    Whip the salted cream

Whisk the cream with the teaspoon of condensed milk and the salt until it just holds soft peaks.

  3. 03

    Build the glass

Pour the coffee over ice and spoon the salted cream on top.

  4. 04

    Sip through the cream

Don't stir: drink through the salty cream into the sweet coffee.

Tips

  • Go easy on the salt. You should notice it, not taste the sea.
