Vietnamese cold brew
Not traditional, but Vietnamese in spirit: strong, smooth and made for heat. Dark robusta gives cold brew a chocolatey body without the bitterness of hot coffee left to cool.

What you'll need
Ingredients
- 100 g coarsely ground dark-roast coffee (robusta works beautifully)
- 1 litre cold filtered water
- Sweetened condensed milk and ice, to serve
Equipment
- Cold brew jar, or any large jar
- Fine strainer or paper filter
Method
- 01
Combine
Stir the coffee into the cold water until all the grounds are wet.
- 02
Steep
Cover and leave in the fridge for 16 to 20 hours.
- 03
Strain
Strain through a fine filter. The concentrate keeps in the fridge for up to a week.
- 04
Serve
Pour 100 ml over ice with a tablespoon of condensed milk, or top up with milk.
Tips
- Too strong? Add cold water one splash at a time.
